BBQ brisket sandwich with St Agur & Apple Slaw
Experimenting with BBQ brisket sandwich upgrades & refinement, because you can always keep pushing the boundaries of this classic of dish. We had a big BBQ brisket smoke cook last weekend which meant I had a good amount of leftovers to work with and try some different options.
Layers working with on this brisket sandwich.
- Espresso bbq sauce (Arron Franklin's classic recipe)
- St Agur cheese
- Crème fraich apple slaw
- Pickled red onion / cucumber
At the moment I'm thinking of trying a BBQed pineapple & sweet corn relish with a Swiss cheese option, almost like a Hunter's Chicken style BBQ brisket bun. I know the Apple Slaw might sound unusual served in a brisket dish but it comes from the fantastic combination of salty St Agur cheese and apple (the combo which I often have quite simply as a sandwich) which adds a creaminess to the brisket.
