BBQ Beef Brisket, Refried beans & madre salsa
With the amazing weather we've been having in the UK recently, I've been cooking up A LOT of BBQ brisket on the smoker each week. And there is only so much brisket I can cope without wanting to mix things up a little bit.
One of my favourite 'simple & quick' Mexican style lunches is fried onions, red peppers, hot dogs & refried beans. Once warmed up, just spread the mix onto a tortilla and sprinkle a little grated cheddar - and lunch is served. But with all the brisket floating around in my fridge today, I decided to try making the recipe with chopped BBQ beef brisket.
Smoked BBQ brisket & beans with ‘madre salsa’ tortillas
I fry up a little onion & red pepper before adding chopped BBQ brisket & refried beans for a delicious way to use BBQ brisket in a different way. Madre Salsa (or Mother Salsa) combines several different salsas into one universal salsa that can be added to a taco or tortilla for extra flavour layers.
Madre Salsa
- 🥑 Avocado
- 🧅 Red onion
- 🍅 Tomato
- 🌿 Cilantro
- 🍷 Red wine vinegar
- 🫒 Olive oil
- 🪴 Oregano
- 🧄 Fresh garlic
- Lime juice
- Montreal seasoning
You can make up a 'madre salsa' and keep it in the fridge for a few days. The addition of oregano & a small amount if fresh, very thinly slice garlic makes all the difference in this salsa, which can really be used on anything as a health sauce.
