BBQ is not just about grilling or offset smoking - you can make stews over open flame using the Potjie. But it doesn't hurt to smoke the meat before for even more smokiness.

Thank-you Pete for the lesson in traditional South African cooking. The potjie, Afrikaans for “small pot”, originates from the Dutch oven but has legs built in making it easy to manage an open fire underneath it. First brought to southern Africa by the Dutch in 1652, when establishing the Cape of Good Hope as a provisioning station for passing ships.
