Virtual visit to The Fat Duck with some experiments with Heston’s infamous Snail Porridge yesterday - was a fun foodie afternoon with @salt_co_chef And the conclusions? Well, the compound butter used to make the porridge is fantastic (butter, parsley, lemon juice, mustard, shallots, ceps & Parma ham) but I think for this dish, dill might be an interesting addition.

For those of you not into snails, braised octopus could work well, especially if the oats were replaced with risotto rice. The walnut oil & sherry vinegar dress fennel shavings is great as it is. And for a bit more taste punch, Parmesan shavings on to added something extra to the dish, which I’d recommend trying.
