Scratch made pork carnitas with ancho sauce, piri-piri sour cream, white onion & coriander - even the taco / tortilla shells were made from from scratch from masa. The pork carnitas smelt delicious through the whole day (it was a 6 hour cooking process) but the best bit smell when it was being fried, so maybe the pork rub was actually the best element?

10g ground black pepper
