Smoked chicken thighs & potatoes cooked in mustard, sherry & cream




One-pot action tonight with my smoked chicken thighs & potatoes cooked in mustard, sherry & cream. This is comfort food, pure and simple - usually something for a winter evening but today, a lunch in the sun and a chance to fire up the smoker BBQ for 30 mins.

I think this dish works even during the summer due to the sherry in the recipe. The Portuguese & Spanish use sherry often in their cooking and I've come across it in lots of tapas dishes. Sherries are  fortified wine (after fermentation) which are aged in American oak barrels. Maybe that's why it blends so well with a quick smoke with oak wood for 30 minutes.  

Smoked chicken thighs in cream, mustard & sherry recipe


Ingredients
  • 6 to 8 chicken thighs (salted and peppered)
  • Two chopped onions
  • Two minced garlic cloves
  • One chopped apple
  • 200ml cream
  • 1 tbs mustard
  • 3 tbs sherry
  • 1 chicken stock cube
  • 200ml water
  • chopped parsley
  • 1tbs of red currant jelly
Method
  1. Salt & pepper the chicken thighs
  2. Put onto smoker using oak or other gentle wood like apple for 30 minutes to add a touch of smoke (this is an optional step) 
  3. Brown 6 to 8 chicken thighs (get them really nice and browned) in a pan
  4. Fry the onion, garlic & apple in the oils from the chicken thigh skins for a few minutes
  5. Deglazing the pan with cream sherry
  6. Add cream, mustard, chicken stock cube, water, chopped parsley & red currant jelly
  7. Add potatoes & bake in oven at 170 degrees for between 30 to 45 minutes till potatoes & chicken are tender
