1. Brine skinless chicken thighs overnight with a little taco spice added to bribe
2. Set pressure cooker to brown & fry onions / chicken thighs till they have a little colour
3. Add BBQ sauce, jalapeños, spices, orange juice, peppers ... choose what you want, close lid & cook for 12 minutes at high.

The chicken comes out ultra shredable & moist.
