Yummm! Veggie / vegan falafel salad wrap with humus, taziki, rocket, red onion & tomato.
It’s a super healthy but simple to make lunch or dinner that packs a serious Mediterranean taste hit (and for me, I don’t even notice it’s vegan/veggie, it just tastes delicious!)
Adding sunflower seeds and / or avocado is worth giving a go and using flat-leaf parsley works even better than rocket.
