Lots of travel means I’ve been lucky enough to experience so many unique flavours but I’m always taken aback by the tastes of Persia. The West seems to have readily adopted Far Eastern Indian & Chinese influences but somehow missed out on the gems from Iran.
Without a doubt, the finest rice dishes I’ve ever had come from Persian cooking, with the Tadig being the king! Made with basmati rice, lentil, fried onion, potatoes, yogurt & saffron milk, the beautiful combination on crisp potatoes & fluffy, fragrant rice can’t be beat.
