Am currently reading ‘Milk: A 10,000-Year Food Fracas’ which covers the chemistry behind the differences in salted vs unsalted butter. I’d have never realise the difference in shelf life times salt makes to butter (or indeed the super long shelf life of clarifies butters ... 20+ years?!?)
