BBQ hotdogs - Pork Belly ‘hotdogs’

Stepping up the BBQ hotdog game with my pork belly ‘dogs’ pit smoker cooked in a hoisin & apple cider vinegar BBQ sauce (see yesterday’s post for the recipe) plus an apple, red cabbage & fennel slaw.

It was more of a pulled pork kind of sandwich but keeping the pork belly in strips and deep frying in the BBQ sauce for a few minutes after added a structure to the meat which was akin to the classic hotdog.

I tried to make it a bit healthy with a spinach salad in lemon vinaigrette but it added nothing ... so it came off during the eating!
