Festive Fennel Coleslaw Recipe

Braised red cabbage is undoubtedly a classic festive but combined with other heavy side dishes, it can be a bit much. My festive fennel coleslaw offers a lighter option that brings a sweet acidity to the Christmas meal without missing on the red cabbage at the table. The colour of this coleslaw is fantastic and you can add elements such as crushed peanuts, cashew nuts or raisins for a different dimension.

2 grated apples
1/2 grated red cabbage
1 grated carrot
1 grated fennel
2 heaped tbs of mayonnaise
1 heaped tbs of sugar
50ml of apple cider vinegar
