Sri Lankan Black Pork Curry Recipe
Sri Lankan 'black pork' curry is highly aromatic & so called because of the dark toasted curry spice / powder - my recipe is as follows (use photos for amounts)- Marinade diced pork in 1 tbs toasted curry powder (you can toast store bought), 1/2 tbs cinnamon powder, 1/2 tbs chilli powder, 1/4 tbs cardamom seeds, 2 tbs minced fresh ginger & garlic, 2 tbs tamarind juice for minimum of 2 hours
- Fry one finely chopped onion, 2 bay leaves & curry leaves in oil till onions translucent
- Add fresh red chilli sliced, sugar & more minced garlic to pan & cook for 1 min
- Add the marinated pork & either one cup of water or coconut milk
- Cook for 45 minutes & serve with garnished with spring onion / red chilli
