Upside-down Mexican Rice Bowl Recipe …
Sometimes it’s nice having Mexican without the wraps or taco shells - and this is an easy 25 minute Mexican mouthful of yummy goodness. It’s not spicy (unless you add chilli spice) & was wolfed down by my daughter.INGREDIENTS
250g of mince beef1 red pepper (chopped)
2 cloves of garlic (crushed)
1 large white onion (chopped)
1 can black beans
1 can of corn
200g of brown rice
1 tbs cumin
1 tbs cayenne pepper
1 tbs smoked paprika
TO ACCOMPANY
Avocado Cilantro / CorianderDiced Red Onion or Spring Onion
Lime
Grated Cheddar Cheese
METHOD
1. Whilst doing step 2 onwards, parboil rice & drain2. Fry mince beef till browned & add to drained rice
3. Fry onions till translucent in beef fat
4. Add spices, red pepper, garlic & fry for a minute
5. Mix in rice, beef, corn & black beans - cook for 5 minutes to ensure all warmed
6. Serve with accompaniments
