A few things happening in the kitchen today 

An ‘exotic’ pumpkin pie & beautiful pork belly roasting in star anise & apple juice - marinated in the following:

Grey salt
Five spice
Garlic
Fennel seeds

As seen above, crush all ingredients into a paste which you spread all over pork belly ... I’ll have photos of that later. I’m struggling to get close to oven as my dog is guarding my dinner so well but after 3 hrs of slow roasting, the pork belly is done. Its now getting compressed under 6 heavy cans in an oven dish to compress the pork belly, and once chilled overnight, ready for slicing into blocks for reheating (or freezing ready for an easy meal another day).
