To poach, bring two quarts or litres of water to simmer with onion, celery, red chilli, bay leaf, star anise, crushed garlic & salt - take off heat, add chicken breast, cover & leave in liquid to poach for 30 mins.This almost sous vide method keeps chicken breast moist & tender.
